NORWEGIAN WHITE POTATO BREAD 
1 pkg. yeast
1/2 c. warm water
1/4 c. sugar
1/2 c. soft butter
3 eggs
2 tsp. salt
1 c. mashed potatoes (may be leftovers)
1 c. warm milk
6-7 c. flour

Soak yeast in water. Add sugar, butter, eggs, salt, potato and milk and mix well. Add flour, one cup at a time. Knead dough until smooth and elastic. Place in a greased bowl and cover. Let rise until double in bulk. Punch down and shape into 2 loaves and place each in a greased 9x5 inch loaf pan. Let rise until doubled. Bake at 375 degrees for 30 to 35 minutes.
