BROCCOLI CASSEROLE 
1 (20 oz.) pkg. chopped broccoli
1 (8 oz.) Velveeta cheese
1 stick Ritz crackers, crushed
1 stick butter

Cook broccoli just until thawed. Drain well. Melt butter and add crackers to butter. Cube cheese and add to hot broccoli along with 3/4 cup cracker mix. Stir until cheese is melted. Sprinkle remaining cracker mixture on top. Bake in 1 1/2 quart casserole dish at 350 degrees for 30-35 minutes.
