BANANA BREAD 
1 c. sugar
2 eggs
1/3 c. water
1 tsp. baking soda
4 tsp. baking powder
1/2 c. butter
1 1/2 c. ripe bananas (4)
1 2/3 c. flour
1/2 tsp. salt
1/2 c. chopped nuts or 1/2 c. coconut, optional

In a large mixing bowl, combine 1 cup of the flour, sugar, baking powder, baking soda and salt. Add mashed bananas; shortening or butter and milk. Beat at low speed with electric mixer or by hand until blended, then on high speed for 2 minutes. Add eggs and remaining flour. Beat until blended. Stir in nuts or coconut.

Pour into a greased 8 x 4 x 2 inch loaf pan in a 350 degree oven for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool thoroughly. Makes 1 loaf. Freezes nicely.
