BUTTERMILK SPICE CAKE 
3/4 c. butter
3/4 c. sugar
3/4 c. brown sugar
3 eggs
1 tsp. vanilla
2 3/4 c. flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1 1/4 c. buttermilk
1 c. pecans or walnuts

Beat sugars and butter. Add eggs and vanilla. Mix dry ingredients alternately with buttermilk. Add nuts. Bake in 2 (9") round pans or a 9"x13" pan. Bake 30 minutes at 350 degrees. Cool and frost.

CARAMEL 7-MINUTE FROSTING:

3 egg whites
1 1/4 c. brown sugar
3/8 c. water
1 tsp. vanilla

Combine eggs, sugar and water in a double boiler. Beat with mixer over boiling water until peaks stand. Continue beating and remove from heat adding vanilla. Beat and spread over cake.
