CAPON WITH APRICOT SAUCE | |
2 capons 3 tbsp. honey 1 can apricot halves 3 tsp. cornstarch 1 tbsp. butter Juice of 1 lemon 2/3 tbsp. apricot brandy Salt and pepper Season the capons with salt and pepper and roast in oven preheated to 350 degrees for 1 hour. Spread honey on and roast for 40 minutes. Mix apricot juice, lemon juice, and water to make about 1 cup liquid. |
