OATMEAL PANCAKES 
2 c. milk
1 1/2 c. quick rolled oats, uncooked
1 c. sifted flour
2 1/2 tsp. baking powder
1 tsp. salt (optional)
2 tbsp. sugar
1/3 c. shortening

Pour milk over oats. Let stand 5 minutes. Fold eggs, shortening, sugar in with milk and oats. Then add flour, salt, baking powder and mix well. Cook in preheated fry pan sprayed with Pam. Serve with butter and syrup. Delicious!
