OKRA GUMBO 
1 qt. fried okra
1 lb. sausage
2 lbs. shrimp or chicken
1 c. bell pepper, chopped
1 c. onions, chopped
1/2 c. tomato sauce
1 qt. water
2 tbsp. roux
Season to taste

If using chicken, brown in large skillet. Remove and saute sausage, pepper and onions. In large pan, place tomato sauce, roux, water, meat, and okra. Cover and cook slowly for about 1 hour. Serve with rice.
