SEAFOOD GUMBO | |
1/2 c. roux 2 lbs. shrimp 1 lb. crab meat 6 crabs, broken 1 pt. oysters 3 lbs. onions, chopped 3 stalks celery 1/2 c. parsley tops 1/2 c. green onion tops 20 oz. frozen okra, cut 3 bay leaves 1 tbsp. creole seasoning 1 tbsp. black pepper 1 tbsp. garlic powder 1 tbsp. file 16-17 c. water 1. Cook vegetables in small amount of oil until tender. 2. Combine all ingredients except parsley, green onions, oysters and file. 3. Bring to a boil. 4. Reduce heat to slow boil for 15 minutes. 5. Add oysters and cook another 5 minutes. 6. Before serving, add parsley, green onions and file. 7. Keep warm on stove. 8. Serve in a cup or bowl over rice. |
