BELLE'S HOT POTATO SALAD | |
4 cooked, peeled, sliced potatoes (about 4 cups) 1 cup chopped onions 3 cloves garlic, minced 1 tbsp. butter 1/2 cup mayonnaise 1/3 cup cider vinegar 1 tbsp. sugar 1 3/4 tsp. salt 1/4 tsp. pepper 1 tbsp. chopped parsley 1 tbsp. cooked crumbled bacon 1/2 tsp. celery seed Fry bacon until crisp and remove from heat; crumble or cut into small bits. In the same skillet (with drippings) over medium heat, cook onions and garlic in butter for 2 to 3 minutes. Stir in remaining ingredients except parsley and bacon. ingredients. Add potatoes, continue cooking, stirring constantly, about 2 minutes or until heated through (do not boil). Garnish with parsley and bacon. Sprinkle with salt and pepper to taste.
