PIZZA SKILLET 
3 c. cooked rice
1 can sliced mushrooms, drained
1/4 lb. sliced pepperoni
1 c. prepared pizza sauce
1 sm. can sliced ripe olives, drained
1 1/2 c. (6 oz.) shredded Mozzarella, divided

Combine rice, mushrooms, pepperoni, sauce and 1 cup cheese in large skillet over medium heat. Cook, stirring until thoroughly heated. Top with remaining 1/2 cup cheese. Makes 6 servings.
