LOW CALORIE STUFFED TOMATO 
6 med.-lg. firm ripe tomatoes
12 oz. pkg. (1 1/2 c.) cottage cheese
1/4 c. finely chopped celery
1 tbsp. minced fresh onion
1/2 tsp. salt
1 tbsp. sour cream or skim milk
1/16 tsp. white pepper
1/4 tsp. minced fresh garlic
30 slices cucumber
6 slices hard cooked eggs
Salad greens

Wash tomatoes, cut into 5 petals, starting at the bud end and cutting not quite through the stem end. Spread the petals slightly. Set aside to use later. Combine cottage cheese, celery, onion, salt, sour cream or milk, pepper and garlic. Spoon into centers of tomatoes. Insert a slice of cucumber in between each tomato petal. To with hard cooked egg slices. Serve on lettuce. Serves 6.
