MANDARIN SALAD 
1/4 c. chopped slivered almonds
2 tbsp. sugar
1 bunch Romaine (head lettuce may wilt faster)
1 c. chopped celery
2 green onions, with tops chopped
1 (11 oz.) can mandarin oranges, drained

DRESSING:

1/4 c. oil
2 tbsp. vinegar
2 tbsp. sugar
1/2 tsp. salt
Few dashes of Tabasco
Pepper to taste

To caramelize almonds, heat almonds and sugar over medium heat until sugar melts and nuts turn light brown, stirring constantly. Burns easily. Remove from heat and continue to stir, turn out on greased cookie sheet. Mix all ingredients except Dressing. Just before serving, toss with dressing. Serve immediately.
