BANANA BREAD 
1 1/3 c. cake flour, sifted
2 eggs, well beaten
2 tsp. baking powder
4 tsp. liquid sweetener
1/2 tsp. salt
1 tsp. vanilla
1/4 c. melted shortening
2 med. bananas, mashed

Sift together flour, baking powder, soda and salt. Combine shortening, eggs, sweetener and vanilla. Add to flour mixture and stir only until flour is moistened. Fold in mashed bananas.

Place in a greased log pan (8x4x3 inches). Bake at 350 degrees for about 60-70 minutes. Recipe may be doubled and baked in a tube pan. Serve with D'Zerta low calorie whipped topping.

NOTE: You don't have to be diabetic or on a diet to like this. My whole family likes it.
