OVEN BROWNED POTATOES 
1/4 c. butter
2 tbsp. vegetable oil
1/2 tsp. paprika
1/4 tsp. salt
1/8 tsp. ground red pepper
2 1/2 lb. potatoes unpared and cut into 1 1/4 inch chunks

Preheat oven to 350 degrees. In a small bowl combine all ingredients except potatoes.

Line baking pan or baking sheet with foil. Arrange potatoes in a single layer in pan and brush with some butter mixture.

Bake 2 hours or until potatoes are fork tender, turning and brushing occasionally with the remaining butter mixture.
