1 beaten egg 2 tbsp. milk 1/2 tsp. salt 1 c. all purpose flour In mixing bowl; combine eggs, milk, and salt. Stir in enough flour to make a stiff dough. Cover and let set for 10 minutes. On a floured surface roll dough into a 16x12 rectangle. Roll up loosely, cut into 1/4 inch slices. Unroll cut in desired length. Spread out and let dry on a rack for 2 hours. Store in an airtight container until ready to use. Drop noodles in large amount of boiling salted water. Cook uncovered 5 to 10 minutes. Makes about 3 cups. |
