RICE QUICHE 
1 c. cooked rice
1 1/2 c. milk
3 eggs
1 tbsp. chopped parsley
5 Italian sausage links
1/2 c. grated Parmesan cheese
3/4 c. Mozzarella
2 (3 oz.) Swiss cheese
3/4 c. cooked chopped onions
3/4 c. ricotta
Dash of hot pepper (optional)

Remove sauce from casing and saute for 5 minutes. Beat eggs in large bowl and milk and mix. Add all remaining ingredients and mix well. Pour in an 8x9 inch oven-proof dish and bake at 350 degrees for 3/4 of an hour. Let cool and serve.
