PEACH JAM 
2 (12 oz.) boxes thawed frozen sliced peaches
1/3 c. water
2 tsp. lemon juice
1/2 box (about 3 1/2 tbsp.) powdered fruit pectin
3 c. (1 lb. 5 oz.) sugar

Scald 5 (6 oz.) jelly glasses. In large saucepan, mash peaches to fine pulp; add water, lemon juice, pectin; mix well.

Stir over high heat until mixture comes to hard boil. Stir in sugar at once. Bring to full rolling boil; boil hard 1 minute, stirring constantly. Remove from heat. With metal spoon, skim off foam; stir and skim by turns 5 minutes. Fill glasses; cool; refrigerate.
