3 c. flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/3 c. cooking oil
3 eggs
2 c. sugar
3 c. apples, peeled & chopped
1 c. chopped pecans
2 tsp. vanilla

Sift together flour, soda, salt and cinnamon. Mix together the oil, eggs and sugar and then add to dry ingredients. Fold in the apples, pecans and vanilla. Pour into greased tube pan and bake 1 1/2 hours at 325 degrees.

GLAZE FOR APPLE CAKE:

1 1/2 c. 4X confectioners' sugar
Juice of 2 lemons

Mix and pour on cake while still hot.
