RAW APPLE CAKE 
4 c. finely diced, peeled cooking apples
2 c. sugar
2 c. eggs
2 tsp. vanilla
1 c. chopped walnuts
2 c. sifted all-purpose flour
1/2 tsp. salt
2 tsp. baking soda
1/2 c. vegetable oil
1 tsp. cinnamon

Combine apples and sugar; let stand 1/2 hour. Beat eggs; beat in oil and vanilla. Mix and sift flour, baking soda, cinnamon and salt. Stir alternately with apple-sugar mixture. Stir in walnuts. Pour into greased and floured 9x13-inch pan. Bake at 350°F for 1 hour.

Topping:

1 c. white sugar
1/2 c. (1 stick) butter
1 c. cream
1 c. brown sugar
1/2 tsp. black walnut flavoring

Serve cake topped with whipped cream, lemon butter frosting, or this boiled sauce. Garnish with whipped cream.
