HOLY GUACAMOLE | |
2 ripe California avocados, peeled and diced 1 1/2 tbsp. lemon juice, preferably fresh 1-2 cloves garlic, minced 1 tsp. dried leaf basil, crushed 1/4 c. red pepper, finely diced 2 tbsp. your favorite salsa 1 1/2 tbsp. slivered almonds, coarsely chopped 2 tbsp. thinly sliced green onion Dollop sour cream garnish 1/2 tsp. salt (optional) 1 tbsp. minced cilantro (optional) Peel and mash 1 avocado, mix with lemon juice, cilantro, garlic, basil and salt. Dice remaining avocado, fold into mixture with red pepper, salsa, green onion and chopped almonds. Garnish with sour cream. Serve with tortilla chips and fresh vegetables. Makes 2 1/2 cups guacamole. |
