BRAN MUFFINS 
3 c. white sugar (less 3 tbsp.)
4 c. Kellogg's All-Bran cereal
2 c. Nabisco 100% Bran cereal
1 c. canola oil (plus 2 tbsp.)
2 c. boiling water
5 c. flour
1 tsp. salt
5 tsp. baking soda
1 qt. buttermilk
6 egg whites

Pour boiling water over Nabisco Bran and set aside to cool. Cream shortening and sugar. Add eggs and buttermilk. Stir. Add Kellogg's Bran, flour, soda and salt, sifted together. Fold in soaked Bran. (For extra moistness add 1 cup of natural applesauce.) Put in refrigerator, covered. Better flavor is not used for 24 hours. Will last 6 weeks. Bake as needed at 400 degrees for 15 minutes.

This is very low fat, and very filling, especially if you have something to drink with it.
