MINI - CHEESECAKES 
2 (8 oz.) cream cheese
3/4 c. sugar
2 egg
1 tbsp. vanilla extract
1 box vanilla wafers

In bowl mix cream cheese, sugar, eggs and extract.

On a cookie sheet place on wafer in each cupcake tin.

Pour mixture into each cupcake tin.

Bake at 350 degrees for 20 to 25 minutes.

Let cool 25 minutes.

Spoon favorite pie filing on top of each cheesecake.

Refrigerate.

Makes 15 to 18.
