BLUE CHEESE AND MOZZA BURGERS 
1 large onion
1 tsp. olive oil
10 pounds ground beef
1 1/2 tsp. garlic powder
1 tbsp. Worcestershire sauce
1 1/2 tsp. yellow mustard
1 tsp. salt
1 tsp. pepper
1 egg
2 tbsp. water
1 cup grated mozzarella cheese
1 8 oz pkg crumbled blue cheese

1. Chop onion in quarters. Remove peel from onion. Slowly sauté onions over low to medium heat with desired seasoning (preferably salt and pepper) until very tender. Remove from heat. Place sautéed onions in food processor. Drizzle in olive oil. Mix until well combined.

2. In large bowl, mix beef, garlic powder, Worcestershire sauce, mustard, onion mixture, salt and pepper. Whisk egg and water with a fork. Mix in with beef mixture. Form into 1/2 inch thick patties with 3 - 4 inches in diameter. Place in Tupperware container with wax paper in between layers of patties. Refrigerate up to 4 hours but let rest for at least 1 hour.

3. Remove from refrigerator. On one patty, pile up both cheeses. Put another patty on top and seal and form again with hands. Make sure not to over fill the patties or else they won't be able to close and they may cause the patties to burst. Cook on grill for 6 minutes per side or until center of burger reaches 165°F on thermometer.

Serve with regular burger toppings.
