ZUCCHINI BREAD 
2 c. sugar
1 c. vegetable oil
3 eggs
2 tsp. vanilla
1 1/2 c. all purpose flour
1 1/2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. nutmeg
2 c. grated zucchini
1 c. chopped nuts
1 (8 oz.) can crushed pineapple, drained

Combine sugar and oil in large mixing bowl. Beat in eggs and vanilla. blend flour, cinnamon, soda, salt, baking powder and nutmeg in medium bowl. Stir flour mixture into sugar mixture. Add zucchini, nuts and pineapple. Stir until well blended. Grease a bread pan. Pour batter into pan. Bake 400 degrees for 30 minutes or until inserted toothpick comes out clean. Let stand for 10 minutes.
