AMY'S BEST BREAD PUDDING 
1 loaf raisin bread
1 cup (2 sticks) butter, melted
1 cup sugar
3 tbsp. brown sugar
1 tbsp. cinnamon
1 quart milk (4 cups)
2 tbsp. vanilla
6 beaten eggs
1 (8-14 oz.) can fruit cocktail (I use Del Monte)

Preheat oven to 350°F. Tear bread into big chunks then place bread in bottom of lightly sprayed baking pan.

In large saucepan melt butter over medium heat, reduce heat to simmer, add sugars, stir until smooth.

Add cinnamon, milk, and vanilla, cook for 5 minutes then add eggs and cook 1 to 3 minutes. Remove mixture from heat. Add fruit cocktail (with juice) and stir well. Pour mixture over bread until all bread is covered.

Bake at 350°F for 45 to 55 minutes or until top is medium brown. Let cool 15 to 20 minutes to set.
