THE BEST PEANUT BUTTER BALLS | |
2 cups creamy peanut butter 4 tbsp. (1/2 stick) softened butter 1 (1 lb.) box confectioners' sugar 1 (24 oz.) pkg. chocolate almond bark (available in Walmart baking section) Combine peanut butter and softened butter in large bowl. Mix very well. Add sugar. You will probably need to use your hands to mix this. The consistency will be almost crumbly. Make in to 1-inch balls or whatever size you prefer. You may have to squeeze them tightly so they will not fall apart. Put in pan lined with wax paper. Cover and freeze at least one hour but I prefer overnight. Melt chocolate in double broiler - use toothpick to stick in to balls and dip in to melted chocolate. I don't take all of balls out of the freezer at once. I take about 6 out at a time. That way they do not thaw too quickly (the toothpick slides out). Place on pan lined with wax paper. Remove the toothpick as soon as you can and place a drop of chocolate over the toothpick hole to cover it up. Cool in refrigerator for at least 30 minutes or as long as your willpower will last!
