ARTICHOKE QUICHE 
1 (9 inch) pie shell
2 (6 oz.) jars marinated artichokes
1/2 c. chopped onion
1 clove garlic, minced
4 eggs
1/4 c. bread crumbs
1/4 tsp. salt
1/8 tsp. pepper
1/8 tsp. oregano
2 c. shredded Cheddar cheese
2 tbsp. chopped parsley

Prick pie shell with fork, bake at 400 degrees until just beginning to brown, about 15 minutes. Drain artichokes, reserving marinade in a small saucepan. Cook onion and garlic in marinade for 5 minutes.

In a large bowl beat eggs. Add bread crumbs, salt, pepper and oregano. Stir in cheese, parsley, artichokes and onion garlic marinade. Pour into pie shell and bake at 325 degrees for 45 minutes. Let set 10 minutes before serving.
