WOMAN OF THE YEAR LEMON MUFFINS | |
2 1/4 c. flour 1 c. sugar 3/4 tsp. baking powder 1/2 tsp. baking soda 1 c. plain yogurt 3 egg whites 1 stick butter, melted Grated lemon peel from 2 lemons Juice of 1 lemon (approx. 2 1/2 tbsp.) 2 tsp. poppy seeds (optional) Mix all dry ingredients together, then add remaining ingredients and stir just until mixed. Fill muffin tins 2/3 full and sprinkle each with approximately 1/8 tsp. sugar. Bake in 350 degree oven 20-25 minutes. Do not overbake. Makes 12- 15 muffins. |
