ZABAGLIONE 
4 egg yolks
4 tbsp. sugar
8 tbsp. Marsala wine
1/8 tsp. vanilla extract

Combine ingredients in top of double boiler. Place over hot water and beat constantly until frothy, smooth and slightly thick. Serve plain or on sponge cake. I put canned pears or peaches (drained well) in bottom of dessert glass. Top with Zabaglione sauce and dot with whipped cream.
