BEEF STROGANOFF PENNSYLVANIA 
1/2 c. finely chopped onion
2 tbsp. butter
1 lb. lean ground beef
3 cloves garlic, finely minced
2 tbsp. flour
1/8 tsp. salt
1/4 tsp. pepper
8 oz. fresh sliced or canned mushrooms
1 (10 3/4 oz.) can cream of chicken or cream of mushroom soup
1 c. sour cream

Yield: 5 cups. Preparation time: 45 minutes. Cooking time: 40 minutes.

Saute onion in butter, stirring constantly (approximately 5 minutes) until onion is rather soft. Add lean ground beef and cook and stir until no longer red. Push beef and onion mixture aside in pan and saute garlic cloves for a few minutes, then stir garlic into beef and onion mixture. Add flour, salt, and pepper to mixture. Stir. Add sliced mushrooms and soup to mixture. Cook slowly for 20 minutes. Stir in sour cream just before serving. Serve on toast or noodles.
