BLACK AND WHITE BEAN SALAD 
1 (15 oz.) can Great Northern beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 1/4 c. peeled, seeded and chopped tomato
3/4 c. diced red pepper
3/4 c. diced yellow pepper
3/4 c. thinly sliced green onions
1/2 c. salsa
1/4 c. red wine vinegar
2 tbsp. chopped fresh cilantro
1/4 tsp. salt
1/8 tsp. ground pepper
8 to 10 c. finely shredded romaine lettuce

Combine white beans, black beans and chopped tomato in large bowl, mixing gently. Add peppers and green onions, stir gently to combine. Set bean mixture aside.

Combine salsa, vinegar, cilantro, salt and pepper in a small bowl; stir with a whisk until well blended. Pour over bean mixture and toss gently. Line a large serving bowl with shredded lettuce; top with bean mixture. Chill. Yield: 10 servings (76 calories per serving). fat 0.5, protein 4.9, carbohydrate 13.9, cholesterol 0, iron 2.1, sodium 67, calcium 50.
