MAPLE SYRUP CAKE 
1 2/3 c. all-purpose flour
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1/2 c. brown sugar
2 eggs
3/4 c. maple syrup
3 tsp. vanilla
1/4 c. water

Sift first 4 ingredients together. Soften butter; add brown sugar and eggs. Mix maple syrup, water, and vanilla. Blend dry ingredients into creamy mixture and syrup, stirring gently. Put batter in a greased pan and bake for 25 to 30 minutes at 375 degrees. Serve warm with maple-flavored ice cream.

MAPLE SYRUP ICING:

1 egg white
2/3 c. brown sugar
1/2 c. maple syrup
Pinch of salt
4 drops vanilla
1/2 tsp. baking powder

Mix egg white (not beaten) to sugar, maple syrup, and salt. Cook in a double boiler, stirring constantly with a rotary beater until peaks form on the icing, approximately 7 minutes. Remove from heat; stir in baking powder and vanilla. Spread on cold cake.
