TAPIOCA DELIGHT 
12 (8 oz.) pkg. pearl tapioca
3 c. water
1 c. brown sugar
1 c. white sugar
1 c. chopped dates
1 c. chopped nuts
2 c. whipped cream

Soak tapioca in water in casserole overnight. Do not drain. Stir in next 4 ingredients; cover casserole. Bake at 250 degrees for 1 hour and 30 minutes. Cool completely. Chop with a spoon and fold in whipped cream. Refrigerate. Yield; 15 to 20 servings.
