4 c. chopped zucchini
1 med. onion, chopped fine
1/2 c. oil
1 c. buttermilk baking mix
3/4 c. shredded Mozzarella cheese
3/4 c. Parmesan cheese
2 tbsp. parsley, chopped
1/2 tsp. salt
1/4 tsp. pepper
4 eggs

Combine zucchini, onion, oil, baking mix, cheeses and seasonings in bowl; mix well. Beat eggs in bowl until light. Add to zucchini mixture; mix lightly. Put into greased baking dish. Bake at 350 degrees for 45 minutes or until top and bottom are light brown. 8 servings.
