ITALIAN GREEN BEANS 
3 lbs. fresh green beans
3 big Spanish onions, sliced
1 sliced green pepper
1 can crushed or whole tomatoes
Salt
Pepper
Oregano
Parmesan cheese
Ritz crackers (2 sleeves)

Saute onions in olive oil, adding green peppers and cooking until tender. Add can of tomatoes, spices and cheese. Simmer about 1/2 hour.

Meanwhile, cook green beans (I use a pressure cooker). After green beans are cooked and drained, place in a 9"x13" baking dish. Cover with sauce. Crush 2 tubes of Ritz crackers and mix with 1 1/2 sticks of melted butter. Place Ritz cracker mixture over green beans. Bake at 350 degrees for 15 to 20 minutes.
