POTATO CAKES 
2 eggs
1 1/2 c. milk
1 tbsp. baking powder
3 heaping tbsp. flour
1 tsp. salt
3 c. peeled & cubed raw potatoes

Whip first 5 ingredients in blender. Add potatoes and blend until fine. Drop by 1/4 cup full into hot skillet, frying until edges begin to brown. Turn over and fry until brown (frying in a little oil). Serve with ketchup.
