J.B.'S JALAPENO CORN BREAD 
3 c. cornmeal, hot rise
1 tbsp. flour, heaping
1 tsp. salt
1 tsp. baking soda
1 c. buttermilk
2/3 c. oil
2 eggs, beaten
1 sm. can corn, cream-style
3 to 6 hot peppers (I use 5 chopped in blender)
1 sm. onion, chopped
1/2 bell pepper, chopped
1 to 2 c. cheddar cheese, grated

Mix cornmeal, flour, soda and salt. Add milk, eggs, oil and corn. Beat to mix. Stir onions and peppers and 1 cup cheese. Pour in pan and sprinkle 1 cup cheese over the batter before going into oven. Bake at 400 degrees for 35 to 40 minutes.
