LEMON TRIFLE 
2 tbsp. butter
2 tbsp. flour
1 c. scalding milk
4 eggs
1 lemon
1 c. sugar

Blend butter and flour and add scalding milk, stirring constantly. When cool, add egg yolks, well beaten with sugar, then juice and rind of lemon. Just before putting in oven, fold in stiffly beaten whites of eggs. Bake 35 minutes in moderate oven. Serve with whipped cream.
