LEMON FRUIT CAKE 
1 lb. butter
2 c. sugar
6 eggs
2 oz. pure lemon extract
1 tsp. salt
4 c. sifted flour
1 lb. white or golden raisins
1/2 lb. each candied red & green cherries
1/2 lb. each candied red & green pineapple
2 c. pecans

Pour hot water over raisins until they swell. Drain. Sprinkle flour over raisins. Cream butter and sugar. Add eggs, one at a time. Add flour and salt and lemon extract. Fold in raisins which have been sprinkled with flour. Add pecans, cherries and pineapple. You will have to stir with a wooden spoon. Mix well. Bake in a greased and floured pan. You can bake in 2 or 3 loaf pans. Bake at 250 degrees for 1 hour 30 minutes. You may check, all ovens are not the same.
