This recipe makes quite a few - possibly 30... 30 lb. potatoes 1 1/2 bunch celery 2 lb. onions 3-4 lb. carrots 8-10 lb. ground beef Grind with 3 prong knife or blade. Grind some potatoes, carrots, celery and onions. Then mix ground beef with the ground vegetables. Mix well with hands. Add salt and pepper to taste. Repeat this step until all the vegetables are ground and mixed good. PASTRY: 6 c. flour 1 lb. lard & about 1" off another lb. 2 tsp. salt Mix and add water. Mix until able to handle dough. Roll dough about 8-10 inches wide and 6 inches long. Put 2 big mixing spoons of mixture onto dough then a pat of butter and 1 teaspoon water. (Save some of the mixture to put on top of butter, then add the water.) Put mixture on bottom half of dough and pull the dough over and press down. Press edges with fork after cutting off excess dough. |
