OVEN-FRIED FISH 
1/4 c. canola oil
1 tbsp. lemon juice
1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. basil
1/8 tsp. garlic powder
1 lb. fillet of flounder or other fish
1/4 c. dry bread crumbs
Pam olive oil

Combine canola oil, lemon juice, pepper, paprika, basil and garlic. Dredge fish in oil-herb mixture and roll in bread crumbs. Spray shallow baking dish with Pam olive oil. Arrange fish in 1 layer. Spoon remaining oil-herb mixture over fish. Bake uncovered in 475 degree oven for 15 minutes or until fish flakes easily with a fork. Makes 2 to 4 servings.
