BIZCOCHOS 
6 c. flour
2 tbsp. baking powder
1 tsp. salt
1 lb. lard
1 3/4 c. sugar
3 tbsp. cinnamon
3/4 c. water or orange juice or sweet red wine
1 tsp. ground anise seed

Preheat oven to 375 degrees. Mix the flour, salt and baking powder. In a separate bowl, beat lard until fluffy, add 3/4 cup of the sugar, 1 tablespoon of the cinnamon, and 1 teaspoon of anise; beat until smooth.

Add flour mixture and water alternately to creamed mixture, beating after each addition until smooth.

Use a cookie press or put dough on a lightly floured board, cut into 18 pieces. Knead each piece lightly, roll out to a circle 1/8 inch thick. Cut each circle into 8 pie-shaped wedges. Makes 144 pieces.

Place on a baking sheet, bake in a preheated oven for 15 minutes or until golden brown.

Meanwhile, mix remaining sugar and remaining cinnamon, dip in cookies while still hot.

CHANGES: You may substitute an unflavored shortening for lard but it changes the flavor. You may add more anise to your taste and the cinnamon may be mixed to your taste.
