CHICKEN GUMBO SOUP 
1/2 lb. raw, lean ham
2 oz. butter
2 c. diced onions
1 c. diced green pepper
1 c. diced celery
1 hen chicken
1 c. diced fresh okra
8 tomatoes, quartered
1/2 c. rice
1 bay leaf
Salt and pepper to taste
Worcestershire sauce

Fry diced ham in 2 oz. butter; add onions, pepper, and celery. Fry for 5 minutes. Add chicken, 1 gallon water and boil for 1 1/2 hours. Wash and add okra, tomatoes, rice, bay leaf and boil 30 minutes. Season with salt and pepper and add a little Worcestershire sauce.
