QUICHE ALLA ROMA 
Salt and pepper
1 (9 inch) pie shell
2 eggs lightly beaten
1/4 tsp. Dijon mustard
1/4 c. finely chopped onion
1 c. (well packed) grated Cheddar cheese
1 tomato, thinly sliced
1 green pepper, cut in thin strips
1 tbsp. oregano
1/4 lb. thinly sliced genoa salami

Preheat oven to 350 degrees. Combine eggs, salt, pepper, mustard, onion and cheese. Spread in bottom of shell. Arrange tomatoes, pepper slices and optional salami on top and sprinkle with oregano. Bake 35 to 40 minutes until pastry is cooked and egg is set.
