FRENCH BEAN SALAD 
1 lb. Great Northern white beans
1 med. onion, finely chopped
1 c. coarsely chopped parsley
1/4 c. vegetable oil
2 tbsp. Dijon mustard
1 tbsp. red wine vinegar
1/2 tsp. salt
Dash pepper

In large pot combine beans with 10 cups water and bring to boil over high heat. Reduce heat and simmer 45 minutes or until tender. Drain well. Put in large bowl while still warm, add rest of ingredients. Toss. Serve at room temperature. May use beans in a jar. If so, put in colander and rinse well.
