FRESH BROCCOLI SALAD 
Flowerettes from 2 bunches of fresh broccoli
1 sm. onion, chopped (red is nice)
1/2 c. raisins
10 slices crisp bacon, crumbled
1 c. mayonnaise
1/3 c. sugar
2 tbsp. red wine vinegar
1/3 c. grated Parmesan cheese or 1 c. grated cheddar

In salad bowl combine broccoli, onion, raisins and bacon. Toss.

For dressing: In mixing bowl, combine mayonnaise, sugar, vinegar, and cheese. Pour over salad and toss. Refrigerate 4 to 5 hours. Serves 8 to 10.

VARIATION: Add 1/2 cup chopped pecans. Use equal parts cauliflower and broccoli.
