MAPLE GLAZED SWEET POTATOES 
1 1/2 lbs. canned or cooked yams, cut
1/2 c. orange juice
1 tbsp. cornstarch
3 tbsp. butter
1/2 c. maple syrup
1 tsp. grated orange rind

In small bowl, combine orange juice and cornstarch.

In large skillet melt butter; add orange juice mixture, syrup and rind. Cook and stir until thickened and clear. Add sweet potatoes; heat thoroughly. Serves 6-8.
