SENATOR JOHN W.'S CHICKEN RECIPE | |
1 roasting chicken, approx. 3 lbs. Giblets Thyme Onion salt Salt and pepper 1 stalk celery, chopped fine 1 sm. onion, chopped fine 2 eggs 1/2 c. milk 1 pkg. Pepperidge Farm stuffing Flour to thicken gravy 1/2 tsp. soy sauce Mix celery, onion, eggs, milk and stuffing. After thoroughly cleaning chicken, fill cavity with stuffing mix. Roast chicken in 350 degree oven for 1 hour; then turn temperature down to 300 degrees and roast for 1 more hour. Check oven periodically. Preparation of gravy: Boil giblets until tender, then chop up fine. Take giblet juice and mix with flour, beat until smooth. Add dash of onion salt, thyme, basil, salt, pepper and the soy sauce (to taste). When chicken is ready for serving, pour gravy around chicken - not over chicken. Serves 6. |
