DAY AHEAD OR LAYERED SALAD | |
1/2 head of lettuce torn into small pieces 1/2 lb. fresh spinach, well rinsed and dried, torn into bite-size pieces 1/2 lb. bacon, fried crisp and broken up 1 (10 oz.) pkg. frozen peas (do not cook) 1/2 dozen eggs, hard boiled and sliced as a garnish 10-12 green onions, chopped, stalks too To dry spinach, put on tea towel and blot dry. Layer the salad in this order: lettuce, spinach, peas, chopped onions, bacon and eggs garnished on top. Completely cover the salad with dressing and allow to set overnight covered with plastic wrap in the refrigerator. DRESSING: 1 pkg. HIDDEN VALLEY® Ranch dressing 1 c. lite mayonnaise 1 c. plain yogurt or 1 c. sour cream, depending on your taste Mix well. Toss the salad immediate before serving and sprinkle with croutons. Serve 6-8. Enjoy! |
