BRAN MUFFINS 
1 c. boiling water
1 c. Nabisco 100% Bran
1/2 c. shortening
1 1/2 c. granulated sugar
2 eggs, beaten
2 c. buttermilk
2 1/2 c. all-purpose flour (unsifted)
2 1/2 tsp. baking soda
1/2 tsp. salt
2 c. Kellogg's All-Bran

Pour boiling water over the Nabisco 100% Bran and let stand. In a bowl, cream the shortening and sugar. Add the eggs and buttermilk, and then add the Nabisco 100% Bran. Mix flour, baking soda and salt together in a large bowl, and then add Kellogg's All-Bran. Next add the creamed shortening and 100% Bran mixture all at once. Fold in only until the dry ingredients are moistened. Leave for 30 minutes. Fill greased muffin tins 2/3 full and bake in preheated 400 degree oven for 15 to 20 minutes. Makes 30 muffins.

Refrigerate the made-up batter, and take only as much as you need to serve with your meal. Add raisins, nuts, dried or fresh fruit to make a pan of hot muffins quickly, when you are in a hurry. Also, freeze cooked muffins and heat in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
